A few years ago I adult an Irish Guinness Beefiness Stew recipe, that is still one of my favorite St. Patrick's day recipes.  But making a good stew tin can take a few hours in the oven, and that isn't always a possibility on a weeknight.  That is why I decided to develop this Guinness beef stew for the crock pot.

  • Add potatoes and carrots to deadening cooker. Carefully pour broth over meat and vegetables.

  • Set dull cooker to low and cook for 6-eight hours. If broth is not desired consistency, see notes for how to thicken it.

  • When finished cooking, stir in the remaining 3/4 cup of Guinness and fresh chopped parsley. Taste and add together salt and pepper to sense of taste. Serve.

The flour used on the beef should thicken the stew, but if it is not as thick as you desire, apply a slurry.  To make a slurry, add ii tablespoons of flour to a small bowl.  Pour in 1/4 cup of hot broth from the stew.  Whisk until smooth and no lumps remain.  Pour the slurry into the stew and stir to fully combine. Cook for 20-30 more than minutes, stew will thicken as information technology continues to cook.
